I like to make English Beef roast in my slow cooker. They always go on sale at Kroger (buy one, get one). I add a can of beef broth, a packet of Italian dressing mix and a packet of au jus mix. The leftovers can go to make BBQ beef Sandwiches, Stir-fry, a batch of beef and barley soup, fajitas, etc. Whatever you are in the mood for!

I think the best leftovers are items from a backyard BBQ. Grilled leftover meats are easily manipulated in to other tasty things such as chicken salad and pulled pork sammies and homemade salads such as potato and cucumber salad always taste better the next day. Also don’t forget about that leftover vodka soaked watermelon, scoop that out and purée with ice, fresh lime and mint for a great cocktail. Mmmmmmm, leftovers!
