maureen’s magical yogurt treat
I dropped by my friend, Maureen Monte’s house recently and she was taking out a warm pan of almonds from oven. Turns out, just by putting plain almonds in the oven for a bit releases their yummy oils and increases the flavor… and they retain that flavor long after the toasting. Who knew?
Purchase 1-1.5 lbs of raw almonds, in bulk.
Heat the oven to 350 degrees.
Spread the almonds in a single layer on a cookie sheet.
Bake for 7 minutes.
Shake the pan to toss the almonds slightly.
Bake for 7 more minutes.
Remove. Cool. Indulge.
Then she shared her other healthy finds…
Fage (pronounced Fa-yeh) 0% fat yogurt (it’s much thicker than your typical yogurt because it’s strained. It can be also used as a replacement for sour cream).
Michigan Tart Cherry Concentrate (in the refrigerated juice section at Westborn’s or other specialty markets – made by American Premium Blends, a Michigan company – visit www.apblends.com )
Simply mix together 1 cup Fage, 2 tablespoons of cherry concentrate and a handful of almonds and ta’da… Maureen’s Magical Yogurt Treat!
I truly do believe this concoction is magical because I don’t know how she juggles her photography, leadership knowledge cafe and holds a full time consultant job… not to mention her gorgeous garden!
